Recipe: Sourdough Discard Pancakes

Yield: 16 pancakes

Instructions

1.

Mix together the dry ingredients. In a separate bowl mix together wet ingredients. Add the wet ingredients to the dry until they are just combined. Lumpy batter is just fine! You don’t want to overmix.

Preheat long griddle over medium/low heat for 5 minutes. Lightly oil the skillet.

Drop batter in ¼ cupfuls onto hot skillet. 6 pancakes fit well on the griddle at once without overcrowding. 

Cook until bubbles start to form (about 2 minutes). Flip and cook until golden brown on the bottom. A slotted turner or griddle turner works well for this! Lightly grease skillet between batches.
