Care & Use

The Field Method

  1. Rinse your pan with warm water and use a brush to remove loose food. Soap is optional!
  2. Use a chain mail scrubber to lift any remaining bits and gently scuff the cooking surface and side walls.
  3. Heat your pan on the stovetop for a few minutes to dry it. If needed, wipe up any remaining moisture with a paper towel.
  4. Apply a small dab of seasoning oil and use a paper towel or rag to coat every surface evenly.
  5. Wipe away the excess to leave a dry, matte finish.

Cook with your skillet often. Every meal builds a base of resilient, naturally nonstick seasoning.

When something looks off

Most surface issues, like sticking, uneven seasoning or light rust, aren't defects. They're part of your skillet's journey, and a little care (and more cooking) is nearly always the cure.

Yes—all cast iron skillets, including chef skillets, work on induction. Cast iron is naturally magnetic, which is exactly what induction cooktops require (even if the bottom of the pan doesn't have full contact).

Most modern cast iron is heavy and rough—sold "as cast" to save on costs. Field skillets are machined smooth, modeled on the best vintage cookware—thinner walls, less weight, and a surface that builds great seasoning fast. It's how cast iron used to be made, done even better.

    good form

No.5 has interesting form. upward sloped handle is perfect. rounded cooking surface is also excellent.

I'm practicing cooking two eggs. Two eggs fried are unique and different when cooked in the No.5, from how I most often fry. I have used a 9 inch carbon steel omelette pan for several years, and enjoy the 'space' in the pan when I do fry, scramble or omelette. I also fry eggs in a No.8 skillet, and I have a similar 'space' to do what I do with two eggs.

I have found the No.5 to be perfect for a single non-meat Grain burger, probably the best pan for it.

When I use the No.5 for eggs, I dream of a No.7 chef pan just like the No.5, just larger like my 9" omelette pan.

    Awesome egg skillet

This is my 5th Field to go with #8, #10, #16, & Dutch oven. Was wanting an egg skillet cuz I’m now retired & by myself so I picked #5 up when it went on sale and love it. Works great for eggs, onions, made 1/2 batch corn bread recipe that I usually use the full recipe for on #8 when my kids come over & turned out great. The super light weight is a game changer for small dishes or a couple eggs.

    Love this little skillet!!!

I don’t know how I could love this little skillet any more!! I had previously purchased a No.9 griddle, but this has rapidly become my most used piece since it is perfectly sized for making 2 or 3 eggs, and it is just so nonstick. As a petite person, I genuinely appreciate how lightweight it is, and I continue to work on my one handed flipping technique for items. Thank you so much for creating such an amazing super lightweight piece.
